t was made popular by celebrity chefs, including Heston Blumenthal, and is completely harmless as a gas. So it was a shitty bartender, according to the article. Like if you tried to eat pufferfish from someone who doesn't know what they're doing. That sucks.

Yikes. It's used when someone needs to freeze something really fast. Like "oh shit, we're out of ice cream and a customer wants ice cream and no time to make more" people use liquid nitrogen. It's also used for things like making quick chocolate molds and such. As for how she was able to drink it? it's a little unintuitive, but your body is so hot, the liquid nitrogen evaporates before touching your skin, however, that cools down the air around your skin slightly and the process keeps repeating until it actually touches your skin at which point you're fucked. here is a video of a guy sticking his bare hand into liquid nitrogen (DO NOT ATTEMPT)  |

It's really basic, everything just smokes a lot which looks impressive but otherwise adds nothing to the food and drink. I've never heard of someone being injured by it before though, and this is really fucking horrible. Edit: that might not be what you were asking
