Because they have to be escaped into the HTML entity for quotation marks before they can be put into whatever database the boards use, otherwise stray quotation marks could screw with a lot of things in post saving and retrieval. Same thing goes for the ampersand and probably other characters as well.

I mean, here's video footage of pizzagaters asking him questions and making very nasty implications about his business in particular. What is your excuse for this? These are all paid actors out to make pizzagate conspiracy theorists look bad?
At 5:19 Alefantis is giving the person recording a tour to show him there isn't anything weird going on. This place is basically a lower budget version of Chuck E. Cheese and those kind of places, and when Alefantis says "this is the kid's party room," the pizzagater gives the camera a look like it's the most nefarious thing he ever heard.
